When crossing the break on a clarinet start with high E and F rather than starting with B or C.  These notes tend to be easier to hit at first and the most important issue in crossing the break is that the student succeed early and without too many difficulties.

I've always had students play a strong low C. While they play it I "pop" their octive keys. Then I have them do it correctly. After this they usually have no problem working their way down to C and B in the staff.
